Ingredients
  

  • 4 cups all-purpose flour
  • 1 tbsp baking soda
  • 1 tbsp baking powder
  • ½ tbsp salt
  • 2 tbsp cinnamon
  • ½ tbsp nutmeg
  • ¼ tbsp cloves
  • 4 eggs
  • cup granulated sugar
  • 1/2 cup packed light-brown sugar
  • cup vegetable oil
  • 2 tbsp vanilla extract
  • 3 cups finely grated zucchini

Method
 

  1. Step 1: Prepping the Zucchini
    Zucchinis are the star of the show, so give them the attention they deserve. Start with 3 medium-sized zucchinis, washed and dried. Cut off the ends and grate them using a box grater or a food processor with the grating attachment. Once grated, place them in a colander over the sink and press with a clean towel to extract excess moisture. Set aside.
  2. Step 2: Dry Mixture
    In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves. This is your dry mixture.
  3. Step 3: Wet Mixture
    In another bowl, beat the eggs and add the granulated and brown sugars. Mix until the sugar is dissolved. Then add the oil and vanilla extract. Beat well.
  4. Step 4: Bringing It All Together
    Combine the wet and dry mixtures, stirring until just combined. Don't overmix, as this can make the bread tough.
    Make sure to evenly distribute the grated zucchini throughout the batter by folding it in. The zucchini will help keep your bread moist, so make sure it's well incorporated.
  5. Step 5: Baking
    Preheat your oven to 350°F (180°C). Grease your loaf pans with butter or non-stick spray.
    Pour the batter into the prepared pans. The batter should fill the pans about 3/4 of the way to allow room for rising.
    Bake in the preheated oven for about 50–60 minutes, or until a toothpick inserted into the center of the bread comes out clean. The top should be golden brown, and the edges will pull away from the pan slightly.

    1/2 to 1 cup of chopped nuts (walnuts or pecans work particularly well)
    1/2 to 1 cup of chocolate chips
    Simply fold the desired add-ins into the batter along with the zucchini.
