Step 1: Prepping the ZucchiniZucchinis are the star of the show, so give them the attention they deserve. Start with 3 medium-sized zucchinis, washed and dried. Cut off the ends and grate them using a box grater or a food processor with the grating attachment. Once grated, place them in a colander over the sink and press with a clean towel to extract excess moisture. Set aside. Step 2: Dry MixtureIn a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves. This is your dry mixture. Step 3: Wet MixtureIn another bowl, beat the eggs and add the granulated and brown sugars. Mix until the sugar is dissolved. Then add the oil and vanilla extract. Beat well. Step 4: Bringing It All TogetherCombine the wet and dry mixtures, stirring until just combined. Don't overmix, as this can make the bread tough.Make sure to evenly distribute the grated zucchini throughout the batter by folding it in.
